Greek Goodness :)

This week I received my #GoodVoxBox courtesy of Influenster and I am just impressed.

Particularly, the Zone Perfect Greek Yogurt Bars. Now I don’t get impressed easily, but I was truly happy with this product!

Zone Perfect Greek Yogurt Bars come in 3 flavors, Greek Yogurt Chocolate, Greek Yogurt Raspberry, and Greek Yogurt Vanilla Berry. My Influenster box contained Vanilla Berry.

I’m munching on it now as I write, it seriously tastes like candy. I can’t believe it’s healthy! One bar contains 3 grams of Fiber and most importantly, 12 grams of Protein. Whoohoo for all the health food and fitness lovers out there!

Blueberry YumYum!

There’s something about warm summer days filled with laughter and sunshine and memories of going picking blueberries with my grandmother when I was younger, it’s nostalgic.

It just happened that we had a yummy batch of blueberries growing in our garden that were ripe for the picking, and what better thing to do with ripe blueberries then bake scrumptious muffins?

I owe it to the lovely Mariya from Teacups and Cinnamon for inspiring me and giving me the idea for these muffins. Actually, tempted me and made me drool over her photos would be the real story but shhhh 🙂

Anyway back to the recipe, I could barely get the berries away from my sister before she gobbled them all up.

Here’s the recipe since I know you are probably drooling! 🙂

Blueberry Streusel Muffins
Yield: 1 dozen

Ingredients

Muffins:
2 cups all-purpose flour
1 ½ tsp baking powder
½ tsp salt
½ cup unsalted butter, softened
1 cup sugar
2 large eggs
2 tsp vanilla extract
½ cup milk
2 cups blueberries, fresh or frozen
Streusel Topping:
4 tbsp sugar
1 tbsp flour
2 tsp vegetable oil

Directions

Pre-heat oven to 350 degrees, lightly grease a muffin tin with cooking spray or vegetable oil, or line with paper liners
In a small bowl, whisk together flour, baking powder and salt, set aside
In a large bowl, beat butter and sugar until light and fluffy
Add eggs, vanilla and milk, add flour mixture and stir until just combined
Lightly cover the blueberries in flour, and stir into mixture
For the streusel topping, whisk together sugar and flour, add oil and mix together until you have a sandy texture
Divide the muffin batter evenly into 12 muffin cups, sprinkle with streusel topping
Bake at 350 degrees for 20-25 min, or until a tester inserted into the center comes out clean
Cool for a few min in the muffin pan before removing to cool on a wire rack.

I promise you this recipe is so quick and easy, and SO worth it! Try it out for yourself 🙂

A little getaway :)

Hey there lovelies!

As I write this, Seattlelites everywhere are suffering from the heat. Actually, there has been a heat wave throughout the West coast this whole week.

The stores are all sold out of air conditioners, the lakes are filled, pools crowded, icecream being devoured everywhere.

I don’t know, I think I’m so used to the rainy and cool Seattle weather, that when we get this heat, it’s unbearable! I really do prefer the rain and cool weather, but sunshine is nice every once in a while 🙂

Anyway this weekend I headed down to Portland for a wedding I was hired for.
I was so excited to wear my new dress!

Anyway, we ended up heading to the coast, to a secluded beach on the coast. It was seriously the most amazing place I have ever been to, it was just breathtaking!

We ended up staying the night downtown and hanging out in Portland. I gotta say, Portland has to be one of the weirdest cities I have ever been to, but still enjoyable!

DIY: Sushi!

Hello lovelies!
One of my most favorite foods EVER is sushi.
Which is funny because the first time I tried it, I hated it and didn’t touch another piece for over 3 years. And then something happened and I just fell in love with it!

Ugh it’s just so good and I cannot ever satisfy my cravings for it, so much so that I decided to try and make it at home so I don’t have to go out and get some every time the craving strikes.

I went out and got all the ingredients and assembled everything. To my surprise and delight, it turned out delicious! Now my cravings will be satisfied any day and time 🙂

Healthy can be delicious!

Hey everyone!

One of my biggest new years resolutions this year was to completely change how I eat. Don’t get me wrong, this wasn’t another “diet”, I actually want to make this a lifestyle!

I had several family members who had complications or even passed away because they weren’t eating healthy, and eventually it caught up to them, so I figured, why not start early, so that I can be healthy and happy at any age?

There are so many great resources out there about clean and healthy eating. I was skeptical, I mean clean eating sounds boring huh? Turns out, you can have great tasting foods that are still good for you! Haha, I am just realizing this. Oh well, better late than never!

Breakfast consisted of a delicious smoothie.

Simply blend frozen bananas, a splash of milk, and a dash af vanilla.

It tasted like vanilla icecream but with less than 100 calories!

I prepared a lovely salad for lunch consisting of delicious veggies- carrots, cucumbers, avacado, corn, and lettuce with a drizzle of low fat ranch dressing.

I never liked avacados and couldn’t stand their texture, but they grew on me and now I am obsessed with them 🙂

And to end of my health kick, I made homemade granola!!

It turned out delicous-here is the recipe.

Honey Nut Granola

Ingredients
1 cup of rolled oats
⅓ cup of shredded coconut
3 tbs of pecans, roughly chopped
2 tbs of pistachios, roughly chopped
2 tbs of slivered almonds
3 tbs of cashews, roughly chopped
¾ tsp of ground cinnamon
¼ tsp of ground nutmeg
¼ tsp of sea salt flakes
⅓ cup of honey
1½ tbs of olive oil
1 tsp of boiling water
Instructions
Preheat the oven to 120 Celsius (250 Fahrenheit) and place the oats, coconut, nuts, salt flakes and cinnamon in a bowl. Toss to combine. Combine the honey with the boiling water and then add to the oat mixture along with the oil. Stir well making sure everything is coated.
Spread out on a tray lined with baking paper and bake for 1 hour, stirring every 20 minutes or so to ensure the mixture browns evenly. When golden leave to cool and store in air tight jars.
Notes
Play around with the ingredients and come up with your perfect granola. Try adding sunflower seeds, dried cranberries, walnuts or whatever else you prefer.
